There is a great little tapas restaurant called Firefly on Paradise just east of Flamingo. It's a local favorite and serves food until 2 am.
On the more formal side, the new Trader Vics near Planet Hollywood is excellent and one of the most visually attractive spaces on the Strip.

I was there for drinks this past january and they could not get anything right. *Sigh* I wish they never downsized the Trader Vic's on Wilshire... Anyways, I hope they managed to get better bartenders there.

If anyone has any recommendations on these I'd greatly appreciate it!!!
I aslo highly recommend:
Enoteca San Marco (Venetian) - Simple and fresh Italian Cuisine
Sushi Roku (Caesar's Forum Shops) - Ask for a Tokyo Delight (alcohol) and you will never regret it!!!
Lastly, I think the Burger Bar at Mandalay Bay is better than the Paris Brasserie because you get more bang for your buck.

A few nights ago...I went to the Skyline for the prime rib...and it was actually worth the hour and a half wait... Of course that's on the BOULDER Strip...
You can pretty much find me at the Boulder Station Buffet... I'm usually the one loaded up with catfish...

You can have your overpriced Nobu sushi. I am looking forward an uninterrupted trip to Hofbräuhaus Las Vegas . Throw in some meat and potato's and I am good! Oh, and that late night pizza at NY NY is pretty damn good after a night of brewski's.

This year is definitely going to be a toss up as far as food goes. We really want to hit Mario's new restaurant at the Palazzo and as far as the other night, I'd love to hit Craftsteak again even though Chef wants to try something new every time we go.
IMO, Nobu is Nobu so why go to Vegas for something you can get out here?

If I go this year....still trying to buy a new house ya know....I definitely will hit the Mandalay Bay Champagne Brunch on Sunday...maybe I will hit the Hofbrauhaus on Friday (only if A-Fro can guarantee me gambling with midgets)...and Saturday is in the air

You would all be believers of Nobu had you experienced it with Mondo Blando last year. The dude KNOWS.
