    i love making this pie.

i get it from "the best recipe" book by cooks illustrated magazine. it's kind of long to type out and i couldn't find it on the internets, but if i find time and you really want, i'll post later. i make the crust and the filling from scratch and it beats the stuff from the freezer or the box.

This is the pie we make for Thanksgiving and Christmas, and my neice made it and entered it in a pie contest at the fair in Sacramento and won first place - she made her own crust, but we use a frozen one.

    3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
    1 tbsp flour
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1 tsp fresh lemon juice
    1/8 tsp salt
4-5 medium apples, pared, quartered, cored, and sliced (we use granny smith or fuji)
    1/2 cup flour
    4 tbsp butter, softened

In a large bowl, mix the granulated sugar and 1/4 cup brown sugar, 1 tbsp flour, cinnamon, nutmeg, lemon juice, and salt. Add apples. Spoon this mixture into the prepared pie crust and set aside.

In a mixing bowl, mix together the 1/2 cup flour and 1/2 cup firmly packed brown sugar. cut in the butter with a fork until mixture is crumbly. Sprinkle this topping on the pie and bake in a preheated 350 degree oven for 40 minutes. Chill 3-4 hours before serving. (If you want more topping, double the recipe)

I made a pie this past weekend. I do not remember the site that I got the recipe from, but they are all pretty much the same. I made the dutch topping with oatmeal, but because of lack of experience and not having a butter cutter it was screwed up. My wife scraped the topping off. Next time I will make the traditional Dutch topping with out the oatmeal.
The pie is pretty simple, I was c***blocked with home made crust and went with my wife's suggestion and used store bought. I did buy the frozen because I could not find the raw type. I guess it is located by the cookies.
Here is some pi pie for your enjoyment.
