Another option for baked bacon and it sounds like you need a dessert: lay it out on a wire rack over a foil-lined baking sheet (for easy clean up), sprinkle generously with brown sugar, and a lil bit of pepper (I use cayenne). Do not flip while cooking, cook til your desired bacon texture. I always go a bit crunchy, and then as the sugar cools it gets crunchy, too, it candies the bacon.
