    Another option for baked bacon and it sounds like you need a dessert: lay it out on a wire rack over a foil-lined baking sheet (for easy clean up), sprinkle generously with brown sugar, and a lil bit of pepper (I use cayenne). Do not flip while cooking, cook til your desired bacon texture. I always go a bit crunchy, and then as the sugar cools it gets crunchy, too, it candies the bacon.

    I was able to make the bacon wrapped dates stuffed with goat cheese and the bacon mac-n-cheese, but the baked bacon didn't happen. I bought a 3lb pack of bacon and it turned out to be almost all fat. Now I like a little bacon lard on my bacon, but I'm not partial to a little bacon with my lard if you know what I mean. It was about 80% fat, so it went to the trash. I think I'm going with thick center cut from now on and remove that variable.

    Both the mac and the dates were great. Just ask Calo. If you didn't know, he's pretty much my non-h0mer boyfriend.
