Catherine's Dream Bars (Dessert...not for the faint of heart but OMG GOOD).
There is a chain of sandwich shops in the Midwest called Potbellies. They have a dessert called the Dream Bar, and it is so damned good you have to eat it before you eat your Wreck sandwich.
This is my re-creation of the Potbellies Dream Bar that my daughter Catherine baked up today as a test run. It turned out EXACTLY like the real deal!! BE WARNED: These things go a long danged way, as they are SUPER rich. But SOOOO GOOD!!!!
Catherine's Dream Bars
(Makes One 9x13 pan full)
40 unwrapped caramels
5 Tbsp. evaporated milk (or whole milk if you don’t have it on hand)
2 C. flour
1 C. of old fashioned oatmeal (NOT the quick 1-minute kind)
1&1/2 C. light brown sugar
1 tsp. baking soda
1&1/2 C. of butter, softened
1 C. semisweet chocolate chips
Preheat oven to 350. While oven preheats, melt caramel and evaporated milk in a saucepan (being careful not to burn it). Remove the caramel/milk mixture from heat as soon as it is melted and set it aside.
Mix together the dry ingredients (EXCEPT the kosher salt and chocolate chips). Add softened butter and blend by hand until homogenous. Press half of this mixture into the bottom of a non-stick 9x13 pan and bake at 350 for ten minutes. Remove from oven and let cool for a few minutes. Spread melted caramel mixture over the baked crust. Crumble the remaining oatmeal mixture evenly over the top of the caramel, leaving as few gaps as possible. Spread chocolate chips evenly across the top. Bake for another 15 to 20 minutes.
Remove from oven. Immediately sprinkle with several pinches of the kosher salt.
Allow to cool to room temperature before serving. Chill in refrigerator if quick serving is required, but do not serve frozen. Serve in 2x2 or 3x3 squares.
