Every day choice is a baby swiss or a sharp cheddar.
For burgers Gruyere or preferably Cypress Grove Humbolt Fog(locally at Smart and Co.)
And Roquefort when I can find it.

Costco colby/jack
For sandwiches I love horseradish cheddar that Ralphs carries.
Brunost or gjetost is one of my favorites. Most commonly found is this particular brand; Ski Queen - sometimes available at Von's. http://www.applepiepatispate.com/wp-...se-wrapped.jpg
Other than that...Muenster, Gouda, Cheddar will work for me.
I used to LOVE cheese, but I am now getting a lil grossed out by it. Love the cheddar though, sharp cheddar. the sharper, the better. Ricotta is the best thing ever!
but lately i've been using Organic Valley cheese (pricey tho) as I am trying to cut back on cheese (or completely cut it out of my diet), but it's so hard. All I know is that processed crap is a big no-no.
goat cheese is freakin nasty!
Goat can be quite sharp and overpowering at times but if you can, look for a goat/sheep/cow blend like the Italian Cheeses Boschetto and Formaggio al Tartufo (like a truffle laced mozerella) from L'Antica Cascina and a dessert cheese like La Tur.
Echo Mountain from Rogue Creamery in Oregon.
These might change your mind.
Since they don't have a web site, below is the Yelp review of the local place I get my cheese from. I'm a member of their cheese club and they set you up with 3 cheeses, some sort of condiment or jam or something unusual, and either crackers or fresh baked bread once a quarter. Last quarter I got a stilton, gruyere, and a Grana Padano along with a jar of artisan tarragon mustard and some great rosemary crackers. I don't recall the brands on these but now that I know this thread is here I'll report back when I get the next batch. I've never been let down. My all time favorites are the Huntsman and the Roaring 40's Blue.
Di Raimondos Italian Market - Paso Robles, CA
My favorite cheese in the world is this:
Boschetto al Tartufo Bianchetto - Whole Wheel: Buy Boschetto al Tartufo Bianchetto - Whole Wheel Online at igourmet.com

Boschetto al Tartufo Bianchetto - truffle cheese
Grill it on some Italian country bread and pair a glass of Prosecco. Yum.
I'm also a fan of idiazibal and murcia, which I can pick up @ La Espanola here in Harbor City along with some Serrano ham. :)
