I see it as a smart business move for people who want to enter the industry, have some ideas, but don't necessarily want the hassle of being locked into a single location. They're usually only open about 6 hours a day, they don't have the overhead associated with a brick-and-mortar approach, and they get to do some weird, wild stuff. It's the internet equivalent of the restaurant industry.
And with the word of mouth on these things, they run into ANY problems with the food and they might as well just close up shop. And while I've only tried the one, like Kubrick said, ya gotta try the food.

Buttermilk Truck at Amoeba on Sunset on Saturday, 1-4pm. Might be just the thing for a pre-game meal before heading to a game watch at ESPN or something.
Or if there's a Kings practice at TSC on Friday morning and you wanted to give your support, it'll also be right around the corner at 200 Continental Blvd in El Segundo from 9-11am!
