I like to use Mochiko flour (japanese sweet rice flour)
My wife made fried chicken for the first time this past weekend and it was better than any I have ever had before. She got the recipe from Thomas Keller. If you're nice, I might be able to get it and share.
I work right by Honey's Kettle in Culver City. I LOVED that place. I couldn't go there more than once every two months because I felt it in my stomach for days. But it tasted SOOOO good! I haven't had it almost a year and I really miss it!

During the four years that Mr. GSG and I lived in downtown Long Beach, we broke our calorie-and-fat banks every month or so at the Long Beach Roscoe's -- that's why I'm glad it fared so well in the chicken-off. We're not sure if Roscoe's is tops in SoCal, but we love the spice and crispness of the skin, as well as the tenderness of the meat itself. (Damn! I'm drooling just writing about it!)

But I love Fried Chicken. I haven't heard of most of those places... it's always either Church's, Popeyes, KFC.
I thought Pioneer Chicken went out of business and Popeyes took over? At least that is what happened when I was a kid and all the Pioneer Chicken places shut down for Popeyes...
I just broke out in zits by just looking at the pics!!!
