I always brine. There are plenty of recipes available. I use Alton Brown's Honey Brine recipe. It locks the moisture & flavor into the tissue.

For me its all about the sweet potatoes. Sweet potatoes, pineapple, cinnamon, and marshmallows in a pot, yummy.
