It passed the test. Made a big bowl of it and it disappeared over the course of the last two days. The Chimichurri on the top worked really good since it's mostly parsley and olive oil. I made it with a little too much garlic but it still kicked ass since we love garlic. I'll hold back next time. This was so easy to make!
What is this "too much garlic" you speak of? I am unfamiliar with the concept. I think I'm going to try making it with roasted garlic next - in addition to raw, of course.

Enjoying some right now with water crackers. I doubled the ingredients this time so it will last longer. Squeezed a fresh lemon in there and added some cayenne pepper for a little kick. It is delicious!!
