    Not a marinade but a rub that you put on right before you cook it.

    I usually put some olive oil on the chicken then pour a ton of this stuff on, rub it in then pile some more on. Maybe even add a little while it's cooking. Then I bbq it till the herbs and spices are just almost turning black and form a nice crunchy crust and it is to DIE FOR!! A little peppery with a hint of rosemary (just the right amount) and other flavors. Takes chicken to the next level!

    The secret is that when you pour it on the chicken, don't forget to go, "BAM!!".

    Try it, I swear it kicks ass!

    sometimes you can simplify...

    salt & pepper
    citrus

    Okay...make this:

    Ingredients

    * 1/3 cup seasoned rice vinegar
    * 1/4 cup lime juice
    * 1 garlic clove
    * 2 teaspoons chipotle chiles
    * 2 teaspoons honey
    * 1/2 teaspoon salt
    * 3/4 cup canola oil
    * 1 cup cilantro

    Directions

    1.
    -Chipotle chilies should be in adobe sauce and can be found in the Mexican section of your store. (or you can use a chipotle bullion cube)
    2.
    -Chop Cilantro and set aside.
    3.
    - Mince garlic and set aside.
    4.
    - Puree Chipotle chilies in food processor.
    5.
    5
    - Add all ingredients except oil and cilantro to processor and blend.
    6.
    - Slowly add stream of oil to form emulsion.
    7.
    - Add cilantro to processor and pulse to combine.

    I know it's a "salad dressing" but it makes the BEST chicken marinade. You have to trust me. My fiancée loves making this for salads, and one day we had this chicken, and the left over dressing, and decided to let it marinate. It wound up being the best!
