    Default It's Chile Con Carne time bitches

    Since this is the first spat of cold, rainy, foggy winter like day here in the middle of no where, Mrs X and I are doing our first batch of Chile.
    Making it with some ground and cubed elk from a harvest a while back, and that Texas style chile makings in the brown paper bag from the market, (Albertsons up here). Have had the dry pinto and kidney beans soaking over night in water. and its all in the crock pot making the homestead smell insanely yummy.

    Will garnish with cheese, green onion and a side of cracklin corn bread and maybe oyster crackers., Should be ready to eat about 3pm. Can't wait.

    here are two different corn bread recipes we use in the x's homestead. both are killer and easy to make.

    Cracklin Corn Bread

    Pre heat oven to 400 degrees

    put 1 1/2 tbsp crisco in 8-9 in round cake pan and put in oven whist it heats up
    (if you are not worried about your arteries, you can use lard or bacon drippings)
    in a bowl, mix together: 3/4 cup yellow corn meal
    1/4 cup flour
    1/4 tsp salt
    1/2 tsp sugar
    1 1/2 tsp baking powder
    To dry mix add: 1/4 cup milk and 1 egg beaten together
    Mix dry and wet stuff together well
    Take pan with melted shortening out of oven and pour into mixture and mix again.
    pour the whole mess into the cake pan and put in oven for about 20 mins.
    Take it out and eat it.
    If you like a sweeter or more cake like corn bread, adjust sugar and or baking power to taste.

    Moms Spanish Corn Bread
    2 beaten eggs
    2 Tbsp veggie oil of choice
    1 can creamed corn
    1 can diced green chilies
    1 cup yellow corn meal
    1 tsp salt
    3 tsp baking powder
    3/4 cup milk
    Mix all and pour into greased 1 qt pan and sprinkle with grated cheese of choice.
    bake for 45-50mins at 375 degrees
    4-6 servings.

    Here is a good recipe for the bean haters. Easily the best chili i have ever made.
