So grilling season officially started yesterday in the Pacific NW with the arrival of

Copper River Salmon!!!!!

As you can see it is a very big deal here in Seattle!

I know what I will be doing this weekend! Last year I spent $40 on a whole 6 pounder that I had the fish man cut in half. That fillet melted in your mouth.

Also I have a brand new Weber Genesis still in the box that I bought last fall. I have a lot to do this Saturday and will be enjoying that wonderful fish that night!!

Started my grill season already but even now it's still a bit chilly when the sun goes down.

we're grilling burgers and not sure what else memorial day weekend. it depends on what we see at beef palace. husband's an eagle scout so he prefers charcoal over gas. it's a bit more work and we only like to do it during the summertime to have something special to look forward to once memorial day rolls around. can't wait! nom nom nom. (that last sentence is for you vegasking!)

Grill season stops in the Puget Sound area in the late fall unfortunately. Kind of tough to grill in the snow.

Had my first fillet of Copper River Salmon last night. Did it on cedar plank with olive oil, sea salt, pepper and lemon juice. It was incredible. One more half of fish that we will do Wednesday night for dinnner. Can't wait.

Well, I just got my first smoker, a Cookshack SM025, and I'm firing it up for the first tonight. I've wanted a smoker for 20 years, and now I finally get to do it. Wish me luck!

man if I could get away with smoking every weekend, I'd do it. it just takes so darn long lol.

OK, I'm back to report that my smoker made AWESOME chicken. Sure it was smokey, but the tenderness was off the charts. My family just raved bout it.

BTW, Cookshack's made in Oklahoma, those people really know what they are doing. :)

I have a smoker and a grill but I'd rather grill my salmon instead of smoking it. Grilled salmon IMO tastes better, and you are right all it needs is salt, pepper, olive oil, and some lemon.
