Brie and gouda are a couple of my favorites.
Every time someone mention's TJ's the more I miss it, one of the few things from Socal I wish we had in Idaho.
We are supposed to get a whole foods, but it doesn't have the charm and the cool food TJ's gets.
I don't discriminate against cheeses. I love them all! Put a plate of any of them in front of me and I'll devour them. Watch out!
I am a cheese lover as well and like just about everything that I have tasted except goat cheese. Favorites; Any sharp cheddar, swiss, gorgonzola.
Favorite use of a cheese so far; wife makes a sandwich using an herbed focacia bread, and chipotle mayo. On that she puts grilled portabella mushrooms ( grilled w/ olive oil,w/seasonings), grilled red bell peppers, and grilled vidalia oninons. All that w/ large pieces of Fontina cheese. Yum!
My chick introduced me to muenster and now I can't get enough of the stuff.
But my personal favorite is still good ol' sharp cheddar.
Boschetto al Tartufo Bianchetto - it's a blend of cow's and sheep's milk with shaved white truffle. It's melt in your mouth good. Try it in a grilled cheese sandwich. WOW.
I'm also a fan of Idiazabal and for blue-type cheese, Cabrales.
Good gouda just rocks!

I'm no cheese snob, I eat all of it. Yum.
I will say that Nature Mart has a great unpasteurized jack cheese that I like a lot.
I just might have to try that....sounds tasty!!
