Let's talk chili!
The wife wants chili for dinner. I usually just go the quick easy Lawrys chili pack and follow the recipe on the back. But it is getting kind of old, I'm looking for something different. Any ideas on how to spice up the Lawrys recipe? Or better yet, share your chili recipe.

I have no recipe...but in my kitchen, adding more or different meat always works. lol
I hate beans so I get no bean or basically a meat sauce version if I can.

Try Carroll Shelby's Chili Kit. It's available at most grocery stores and turns out great.

about 3 pounds of stew meat or boneless country ribs, cubed about 1-inch or so.
1 large can diced tomatoes
1-5 chipotle peppers, packed in adobo (1 is fairly mild, 5 is thermonuclear), finely minced
1 large onion, diced
1 large bell pepper, diced
1-1/2 Tbsp cumin
2 Tbsp chili powder
salt and pepper to taste.
put all ingredients in a crock pot for about 6 hours on low, or 4 hours on high. slower cooking means more tender meat.
the spice measurements are approximate. you may want more or less. experiment as you go.
here's the super secret part: add about 2 Tbsp peanut butter, and 1/4 to 1/3 a disc of mexican chocolate (i use "abuelita" brand), grated. the chocolate adds a smoky sweetness, and the peanut butter adds a rich bottom end.

Thirded!!! Best chili mix ever. I use ground turkey in mine and it turns out fantastic.

Turkey chili is where it's at. I always used to make it with ground beef, and then one day I decided to go with turkey. Will never make it with ground beef again.
Don't use any chili pre-mixed packs though. I go straight from scratch. Don't use any measurements for the spices, I just go by taste.
1 large can of tomato sauce
1 large can of crushed tomatoes
1 small can of tomato paste
1 can of mixed chili beans
1 can of kidney beans
1 can of brown beans in tomato sauce
Ground turkey breast
1 med. onion
1 green & 1 red pepper
3 med. mushrooms
2 cloves of garlic
hot pepper flakes
salt & pepper
a few dashes of Frank's hot sauce
a few dashes of Worcestershire sauce
half a beer
I don't cook the veggies, just the ground turkey. I let all that cook away in a slow cooker for 6 to 8 hours.
