Duck or Pork with Bohemian dumplings and sauerkraut with melt in your mouth crescent rolls.
My mom is a kickass cook no matter what she's making. From Indonesian to Colombian to German to French, she can make it all. If I had to name my favorites, I'd be here all night. I'm just glad I inherited all her cooking skills. If I HAD to pick some though...
Soto ayam (Indonesian chicken soup type dish)
Bandeja Paisa (Colombian dish of ground meat, beans, rice, chicharron, fried egg, platano)
Rouladen (German rolled up beef goodness filled with mustard, onions & bacon, I request it for my birthday every year)
Lasagna (all made from scratch)
Don't even get me started on her Colombian tamales and the Ajiaco (chicken soup with tons of veggies) that's a New Year's tradition. Some LGKers have had them and can vouch for them.
And she has this other dish, no clue what its called, but it's definitely from her Colombian roots: chicken, garlic, onions, tomatoes, potatoes, green beans and spices all cooked in one pot. I've made this for friends a few times. It's my idea of pure, comfort food. I could eat it every day and never tire of it.

She is getting up in age now, but she still will make these for special occasions.
Lately, she has started baking, and now she is turning out these kickass cakes and pastries.
And dont get me started about foods grandma used to make....I could go on for hours.

lamb porkolt (the stew they call goulash here, whereas real goulash is a soup)
arroz con pollo
roast chicken & potatoes
In other words, the stuff that made me feel better when I was sick as a kid.

The first thing that came to mind when I started reading this thread was mom's potato salad. Thick, creamy and tasty! She was well known for it and had many requests for the recipe or to make it for picnics. But mom never cooked by recipes, so she was never able to give it to anyone.
Then I read BeerMan's post... mom also made some awesome stuffed peppers. She used full peppers with the tops lopped off, stuffed with rice and ground beef, put in a pressure cooker with tomato soup and other ingredients. Fork tender and phenomenal!
Enchiladas are my favorite thing she makes.

Got to be the potato salad. My sister made if for me last xmas since mom has passed on and it was delicious.
