I have around 10 decent to really good beers that I'm cellaring for... well I can't honestly tell you because I don't know. I have a few Sierra Nevada beers and a couple random Belgians, but the beer that I haven't the slightest idea what I'm waiting for is the 2014 Firestone Walker Parabola. I somehow managed to find two of these, and Beer Advocate says that the beer is fantastic. I had the 2013 and loved it.

So, what's the one beer you have in your cellaring space that you don't know when or why you'll open?
Zero, and will never cellar anything again. I wasted too many great bottles in the past in which cellaring did more harm than good. I think its because bottles just dont retain the freshness as long as a can would. In addition my palate much prefers freshness regardless of how hot (boozy) the beer is after bottling.

I have too many bottles that are sitting here right next to me. Most being stouts and barleywines which tend to handle aging much better than other styles. The reason I have so many is not so much that I wanted to amass such a collection but mainly because I tend to buy way more than I actually drink. I have every intention of drinking these brews but life usually gets in the way.

I have a vertical of Sierra Nevada Bigfoot going. Every year I'll buy 3 four packs. This is because I don't really dig that beer fresh as I find it rough around the edges, but with 2~3 years the hops drop out and the beer settles into a great English style barleywine.

In other news, Noble Aleworks Naughty Sauce is friggin awesome. The nose of coffee and hazelnuts always gets me and the nitro creaminess makes it silky smooth. Drinking a Bear Republic Cafe Racer 15 right now. HUGE DIPA.
Naughty Sauce is one of my favorite beers! Have you tried the variations of it? There's Cinnamon Roast Crunch which is Naughty Sauce with cinnamon added, and there's Bean Bump which is an imperial version of Naughty Sauce.

I haven't as of yet. I've seen the bars around tapping them on occasion but I'm too lazy to go. I rarely make the effort to go to a bar for a specific beer.

like unholygoalie, I have amassed way too many beers in the past. mostly Stone's anniversary releases and Vertical Epics. I started not buying more of theirs until I met my wench. it's been a battle some days of the year when she'd grab a few more than we need at a beer store, which location is unfortunate because it is right by her office.

at this point, I have too many styles in the cellar where they should not have been in the first place. most of them IPAs, sadly. I am pretty confident that that is the situation where az used to be in.

I'll have to say that I have just about that many beers here. problem is that I've been too lazy to inventorize them.
I BELIEVE I'll have another beer!
