Heres a recipe similar to something my family has made for thanksgiving/xmas/easter for as long as i can remember. Nothing crazy, but definitely my favorite thing to eat (besides deep fried turkey)
Cheesy Potato Casserole
2 lbs. diced hash browns (thawed)
1/2 c. melted butter
1 can cream of chicken soup
1 pt. sour cream
1/2 c. chopped onion (ive never made it with onion)
1 tsp. salt
1/2 tsp. pepper
2 c. grated cheddar cheese
1 c. crushed cornflakes
In large bowl combine thawed hash browns and melted butter. Season with salt and pepper. Add remaining ingredients except corn flakes. Pour in 9x13 pan; top with crushed corn flakes mixed with small amount of melted butter. Bake at 350 degrees for 45 minutes to 1 hour.
