This probably isn't all that original...in fact, I'm sure it's been done before...but here's my recipe for Shrimp Boats (open faced shrimp salad sammiches).
Makes 4 servings
1lb shrimp, cooked, tailed, chopped
1/2 cup light mayonnaise
1 1/2 cup medium cheddar cheese, shredded (holding out 1/2 cup for the tops of the sandwiches)
1/2 cup red onion, chopped
2 tbsp brown mustard
1/2 tbsp aleppo pepper (or crushed red pepper flakes if you don't have aleppo)
1/2 tsp minced garlic
In a food processor (or by hand if you want a coarse chop), chop the shrimp.
In a bowl, combine shrimp with all the remaining ingredients (holding aside 1/2 cup of cheddar cheese for the tops of the sandwiches). Allow this to refrigerate for 1 hour.
Preheat the oven to 325 degrees.
Halve four six-inch french rolls (eight of the small round ones) and scoop out some of the insides. Scoop 1/2 cup of shrimp salad mixture into each half of the french roll and top all with remaining 1/2 cup of cheddar cheese.
Bake on a baking sheet for 20 minutes, or until cheese topping is slightly browned.
Yum it up, fuzzballs.
In case you're counting calories, one serving (a whole french roll cut in half with 1 cup of shrimp salad between them) is approximately 650 calories as prepared. Not a bad-sized lunch!
