Default What should I do with this smoked salmon?

So I've got this smoked salmon that's packaged in air tight plastic. I know I could eat it plain or on a bagel with cream cheese but I want more. It's the reason I've let it sit for so long.

Do you have any recommendations on how I can dress it up for a tasty snack? I'm open to just about anything.

    Thanks!

    From food network:

    Smoked Salmon and Cucumber Tartine

6 slices good country white bread, crusts removed and toasted
    4 slices smoked salmon
    1/4 cucumber, thinly sliced
    1/2 lemon, juiced

Lay out the toast slices and divide the smoked salmon equally among the pieces. Place the cucumber slices on top of the smoked salmon, sprinkle with the lemon juice and serve.

as for a main meal, just break the salmon up into pieces and toss them in a casserole or what have you. best if done near the end of the cooking process.

Is it thin-sliced raw-ish lox-style, or more like that Canadian or Alaskan smoked chunk kind?

Make a Salmon Tabbouleh and serve it on a Romaine Leaf. It's tasty and light-snackish. The base of the Tabbouleh can be couscous, which is standard, or Grape Nuts for more texture. And, for the love of God, don't use cheap olive oil. Enjoy.

Scramble it with some eggs and onions. Good stuff.
