Pollo asado and grilled carrots tonight
I'm in NJ this week so I will be heading to Rutt's Hut for deep fried hot dogs.
I picked up some pre-marinated Pollo Asada from Vons. I will chop it up and cook it in a skillet over high heat to char it and then serve it over rice with pinto beans, cilantro and avacoado to make a quick mexican rice bowl. It is easy to make and little clean up.
Hmmm, maybe I will go get some fresh corn and grill it, then remove it from the cob and add it to the bowl.
By the way, when I grill corn, I remove the silk and the husk. Then I rub butter all over it and put it directly on to the grill, no husk and no foil. It takes about 15 minutes and has a nice char on the kernels.
