Sweet, There is so much about this game I do not understand. I need to think what I would do in real life and not accept what they give you in the game. Like not take the car that they place on the map when they say go grab a car.

Some other stuff:
You and your crew/friends can only pull of small heists like liquor stores and gas stations until somebody has enough money to buy a high end apartment or safe house. Once you do so then the high end, big time, campaign type of heists are unlocked.
When creating your online protagonist you will have to chose from a large database of info that includes what your player does while you are "offline". Things such as sports you play, how much tv you watch, drugs you might do ect ect ect. This all determines your starting skill tree. but much like the campaign you can do various activities to increase some areas.
You might want to stay in the good graces of PMC Merryweather as you can use them to phone in airstrikes.
You DO NOT want to carry a lot of cash on you. You can be robbed by other non-crew members and killed. All of the money you have on you at the time will go to them. You can extract revenge by hunting them down or you can put a hit on their head. I imagine this will work the same as a bounty works in RDR where they are tagged for your crew to see and they will be notified you are coming after them. Time to lock and load. Don't worry though, there are TONS of atms located on the map that you can put your money in.
There are female avatars you can choose from.
Rockstar can tweak game setting and mission setting whenever they want and is quick and easy to do. So one day a heist might be one way and the next day if you play it with some friends you could only have access to certain weapons.
When robbing a store you can yell at the clerks to "HURRY" via your headset and they will speed up the process.
If you want to go about your business and do things and not worry about getting shot then there is a passive setting you can enable that allows you to not be shot by other XBL players. But if you return fire then the passive setting is disabled.

If you are talking about the early mission with Franklin, you don't have to go to quite the lengths Ppharoah described. The key thing about the races is that a crash (or even a minor collision) will cost you a lot more than it did before. In GTA IV, most crashes would end with you pointed in the direction you were originally going and it was easy to accelerate back to speed. Not so much here. Play things safe when you get into tight situations, especially sharp turns - use your brakes.
