I own World Cup 2010 and it is a lot of fun. Tried the demo of FIFA 11 and it just seemed flat.
Playing national teams are just a bit more fun IMO.
I have played PES in the past.. maybe I'll rent or try the demo of the new one but I think I already have my soccer itch covered.
Picked up PES 11 yesterday and do not regret going with it over FIFA at all.
The game has great flow to it, and you get more a sense of building up the attack rather than the constant pass-pass-shot, counterattack, rinse and repeat that I experienced in FIFA. The number of 'moves' while dribbling is pretty extensive, and add a good bit of flair to the game. The AI does a rather nice job of reading the plays, though they could be a bit quicker about making runs. Goals seem to come in a variety of ways, tend to be rather realistic and you don't get a sense that they can only be scored from specific points.
I haven't played enough to speak on the differentiation between players, but there's at least some attention paid to doing so aesthetically and skillwise. Brede Hangeland looks and moves like a lanky 6'4" player, and does not control or move the ball like Bobby Zamora does.
The game is not necessarily 'pretty.' The graphics are clearly inferior to FIFA's, though they have done a pretty solid job on their animations. The stadium atmopshere also isn't as well done nor is the commentary. Additionally, PES11 does not have licensing for the EPL, so while the colors and the players are all correct, you'll be playing for Merseyside Red instead of Liverpool or East London instead of West Ham. The Champion's League teams, however, are represented, and La Liga, Serie A, Ligue 1, Eredivisie and several other European club teams all appear to be properly licensed. I know it can be an issue for some folks though.
Just wanted to pass on my thoughts, feel free to ask questions if you're curious about the game.
Iron Duke, I've watched plenty of gameplays on Youtube and none of the videos had any commentary. Does that game even have announcers?
I've been playing FIFA in Be A Pro mode this week and the passing is a lot tougher than it's been in the past. Not nearly as much of the point-to-point passing as there used to be, players have to be under control enough to make passes and they have to be weighted correctly or defenders will jump on them.
I've also noticed it's a lot tougher to keep a ball. You have to angle your runs properly in order to shield the ball but still move where you want to or, again, defenders will just step in and cut it out.

Yeah, the defenders are like piranhas eying whoever possesses the ball as a meal.
I have now played the demos of both. I don't think you can go wrong with either choice.
Pros of FIFA
1. All the licenses of all the teams and domestic leagues
2. Perhaps easier to pick up and play than PES.
3. Great graphics,animations and presentation.
4. Best FIFA AI yet.

1. Great AI - play seems more fluid and soccer like than FIFA.
2. Best graphics yet for PES.
3. Master League and UEFA Champions League and some domestic leauges.
So my Be a Pro player got picked up by Man U in FIA11 and the team is playing in all the competitions - EPL, FA Cup, Champions League (called "Champion's Cup") and another competition that we got bounced from pretty early on. So there's a better feeling of completeness to the competitions than the last version where you only played the one league season.
The National Team portion has been removed from Career Mode, though, so if you wanna play in the World Cup, you have to set up your own tournament.
