Those are a couple good examples. Cheese refers to the fact that people who know they work will use them all the time.

I do NOT use cheese goals for that very reason, I prefer my scoring to be earned. Online league play is a whole different story because people have win records they want to get as high as possible. So if you still have questions on cheese goals just log in and watch for the people who score on you the SAME way over and over. Those are your cheesers right there.

I have noticed that I get beat on the breakaway backhand to forehand move quite a lot. I'm not familiar with the point shot against the grain though.

One thing I've noticed that needs to be fixed is the goalie interference whenever I was on offense on BAP. Three times I shove the goalie clearly away from the net while my D was shooting from the point and the goal is good, no penalty.

The new skating engine was a pain at first, glad speed burst was put back in, if your endurance is low, you will lose energy really fast. Took a while to get used to it, overall it made it more realistic for me.
