Something you can monitor heat, humidity, smoke and time. Along with a good brine, youre on it! I smoke Turkey, pork, beef and fish all year long in the pit.

    Anywho, I bought the Weber Genesis. Its a beauty!
    All you have done is move your range out side and put your broiler on top. You can doctor up char broiling all you want with rubs, seasoning and liquid smoke. If the meat hasn't been cooked on wood or coals, it isn't BB-Q. And all you Flay wanna bees should just admit it.

    Which was in reference to the post I was addressing (and quoted ftm) about the manliness of cooking with carbon vrs gas... two different styles as you've keenly pointed out.
