banh tet (fried). rice cooked in chicken broth with saut?ed chicken, shiitake mushroom, wood ear mushroom and lily flower. that's my new year meal.

Fisch, that lamb looks decadent with the foie! It must have been delicious.

My first attempt at pork belly after brining it overnight.

Went and bought a digital scale to make the brine with the correct proportions using Thomas Keller's recipe: Leeks, onion, carrots, thyme, bay leaf, peppercorns.

Could not find curing salt anywhere locally (the pink stuff with sodium nitrate) - Does anyone know where I can buy it locally?

Now it's cooking in the water bath at 180F for 12 hours. Will chill and press it overnight and tomorrow I'll find out how it turns out.

also, i'm interested to see how that pork belly turns out. i'm a big fan of pork belly. one of the biggest reasons that i didn't turn vegetarian when i was in my mid 20s was that i realized a lot of my favorite vietnamese dishes are made with pork belly. not the same when made with vegan substitutes.

Can't wait to scrape and spread some of that gel on butter toasted bread and use the rest in a sauce.

Will attempt to create crackling on half of it and will remove the skin on the other half. I'm so prepared to fall on my face...

The pork belly turned out beyond amazing!! So rich and with a nice crispy skin. Served with mustard vinaigrette and polenta medallion.

Finished the last of the pork belly. I had it for breakfast, lunch and dinner... In a way I'm glad it's gone because it is super rich.

I forgot to come over here. I made this for my son's girlfriend, she is a vegetarian. Also, I truly do not know how to make the pics smaller. sorry.

Stuffed Cheese pasta Shells

When you watch as much hockey as my hubbypat and I do, we cannot eat greasy game food all the time. First off, we would be over 300 pounds each because we watch hockey every night! So the challenge is finding healthy balanced foods that we can cook and not miss any of the action of the game.

I found this recipe with lots of meat and veggies in it and picked it apart. I added and subtracted ingredients until I felt it was a great dish for us. Plus, I can put it together early and keep refrigerated until I want to cook it. Add a salad and you have an easy dish and you won’t miss a minute of the hockey game.

I put a small amount of sauce on the bottom of the pan. I used the new Reynolds wrap with parchment paper. Perfect! Nothing sticks at all.

Cover with remaining sauce and left over cheese. I use a lot of fresh parmesan and I think it really adds the right amount of oomph! to the shells.

Cook until hot inside and all the cheese is golden brown, about 45 min to an hour.

Serve on a pretty plate with a salad on the side. Who says vegetarian is boring? Not us!!

Stuffing Ingredients
•1 (12 ounce) package jumbo pasta shells
•2 eggs, beaten
•1 (32 ounce) container ricotta cheese
•1 pound shredded mozzarella cheese, divided
•8 ounces grated Parmesan cheese, divided
•1 tablespoon dried parsley
•1/2 lb fresh spinach (or 1-10 oz frozen, thawed and dried)
•2 teaspoons salt
•1 teaspoon ground black pepper
Sauce Ingredients
•1 28 oz can tomato sauce
•1 tbs each basil and oregano
•1 tbs smashed garlic
•1 pinch sugar
•1 pinch fennel (if you have it, if not its fine without)
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large pot, bring tomato sauce and spices together to a boil and simmer for as long as you like. The longer the better!
3.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
4.Chop and then steam your spinach in the microwave for a few minutes until done. Pat dry.
5.In a large bowl, mix eggs, ricotta, half the mozzarella, half the Parmesan, spinach, parsley, salt and pepper until well combined. Stuff cooked shells with ricotta mixture and place in a 9?13 inch baking dish.
6.Pour sauce over stuffed shells and top with left over cheeses.
7.Bake in preheated oven 45 to 60 minutes, until done.

vegetarian is totally not boring. i'm vegetarian half the week (3-4 days) for now. i can't totally give up meat, but i feel better when i don't eat so much of it.

ps. bacon doesn't count. totally making bacon tonight. i'll post pics.

I'm the only female in my house so I really haven't cooked without meat and potatoes for years. Now, we have my son's darling little girlfriend so I'm having fun trying to learn new recipes. I;m going to spend a weekend trying to figure out a veggieburger. lol. I want to make my own.

I used to live within short walking distance of THE SPOT (http://www.worldfamousspot.com/menu.htm) in Hermosa Beach and having enjoyed many vegan meals there because of my girlfriend's preferences, I can say that their Neptune Loaf? was one of my favorites. But that was a long time ago...

Ricotta can be an underappreciated ingridient. I used to mix it with raw shredded carrots, skip the mayo and make it a sandwich on whole wheat olive rosemary bread. The mixture takes spices well.


I like what you got going on here Tracy. Is that bag on the left from Penzeys Spices Torrance Store (http://www.penzeys.com/scstore/stores/torrance.html)?

savory cr?pe with bacon, Brie and avocado. we also had dessert cr?pes with jam or sugar. all because it's cr?pe day (la chandeleur). my MIL is a recovering catholic and my husband's favorite food is cr?pes so this was his special request...

totally feelin' ya. i only ate meat 2 days/wk and no red meat before i met my husband. i was also way skinny. as we started living together, i started catering to his tastes more and now that we have a kid, i want to provide them with balanced meals and ironically, my husband did the whole vegetarian thing for a number of years while he was a young punk in SLC but he definitely doesn't want to go back to it.

haha. ya, i dated a guy whose family (except for him) were vegetarian. i hate the taste of tempeh and lentils. i really do think you're missing out if you refuse entirely to eat meat. i've mentioned here on these boards before that the one thing that stopped me from completely turning vegetarian is my love for vietnamese food. the vegan substitutes that you would make when you have buddhist monks over just do not live up to the real thing. not to me at least. i compromise by consciously making the decision to eat meat that i know i will enjoy. i don't regularly go out and order food at places where there's a chance the meat is just "meh" or "fuel" to keep me going. if there's enough of a doubt, i will go for the vegetarian option on the menu and when cooking at home, i try to buy sustainably farmed or kosher meat. bourdain's buddy eric ripert has gone on a number of times about respecting the animal and that's what i try to do! ;)

I've never been to a Penzy's store, but I only buy and use Penzy's spices. I buy online and I just cringe having to buy anything in the regular store. Plus my hubby is addicted to the course ground tellicherry pepper, I keep huge bags of it in fridge! lol. Torrance is far away from me, I wish there was one around here (Glendale) I would check it out for sure.

thanks orph. i don't know if it's good or bad, but i'm pretty high functioning when i'm drunk... i can spell well, cook, clean, concentrate, etc... i'll say though that i rarely get f***ed up outta my mind drunk. once i'm there though, god help me, i'm rolling around the floor, laughing, walls are spinning, i'm gonna barf, i might piss in a dresser drawer, i am no longer functioning. haha. i made those wings and mango after drinking about 1/3 a bottle of bourbon, some beer and then some champagne... i'm a small girl though... :)

Ohhh! Share your wing recipe please. I made hooters wings yesterday for the game and we weren't very excited about all the fried stuff on it but I dindt' have a very good recipe for wings just like yours. Thats what we were craving.

I tend to be a sloppy drunk when I cook. Sucks for hubbypat because he cleans up. lol

I made the hooters chicken wings for superbowl and really liked them. Hubbypat would have liked the ones lunchbox put up instead but I wanted to share them because I thought they were so easy to make! There is no secret for hooters wings. Just let the flour sit on them in the friddge for at least 90 mins to get all tacky. I thought they were really good. Served them with Franks. yum :bananadance:

lol at the salad.

hey, i didn't know king's fish house has lobster rolls. did that have mayo in it? can you get it without mayo? i don't normally eat at chains, but i'd be willing to try it if you could get it with butter. i've only had a lobster roll from the lobstatruck and their lobstaroll with butter is so OM NOM NOM.

this restaurant specializes in vietnamese food from the central region, which is my favorite.
the round ones are banh beo dia. the rectangular one is banh nam. iced vietnamese coffee.

yeah, it had a creamy mayo base but I imagine you could ask for it with butter...though I think the added mayo helps them determine portion size. if it was butter you would need more lobster per portion. heh

oofah. DO NOT LIKE.
i hate mayo. lobsta truck has a crab roll with mayo that my husband gets and the amount they put in there is very little. you can't even tell it's in there, all you get is the sweet taste of crab. it would severely bother me and make me feel sick if i were looking at a sandwich that had enough mayo in it to diminish the size of my portion of lobster. hahahaha. oh well, guess i'm sticking to hunting that truck down.

went to the pub on friday.
their food isn't all that remarkable. i really just wanted a pint of belhaven scottish ale. i'd had their trifle a few years ago and it was probably the worst trifle i'd ever had, which is pretty amazing given that trifle is often made with leftover cake bits.
after coming here for almost 10 yrs, something finally told me to have the sticky toffee pudding and when i did, my mouth was like omigoshers. i'd already taken a few bites before i decided to snap a pic...

Set it on the table percolating like mad around the edges and reached behind me to get the iphone, not two seconds later turned around and lil' miss patience had gouged a massive serving and had it headed to her plate. I made her put it back in gently for the picture. Hence the Frankenstein scar. It was f'n divine btw.

ya, sometimes it takes me a while to post because i have to upload it to photobucket first. pain in the ass. but i like looking at other peoples' pics of food and i guess i should post some offerings so they aren't the only ones...
posting any pics from my phone (even non-instagram ones) is yucky though. at first they'd come up great but something happened with the lgk app now where the photos are ginormous. i don't even look at 80% of peoples' photos if i have to scroll to see the right side of it.

i was almost vegetarian yesterday and today, but i had bacon in my corn chowder. always something... that tofu and rice dish i made earlier was almost vegan if not for the fish sauce used to season it.

Is marrow that good? My sister, who does have a culinary arts degree, tried it at the buffet at the Cosmopolitan (and while their buffet is awesome for a buffet, might not be the best place to try it), she said it tasted like beef flavored jello.

definitely dont eat it at a buffet. even a nice one. it just sits there but you have to eat it fresh out of the oven or it might congeal and then become like jello which IS disgusting. it is best when roasted at like 450 degrees and then spread on toast with various garnishes like salt, garlic, chopped red onion, chopped parsley or in the case of mozza--celery leaf micro greens. i never ate it this way as a child since it isnt common where my mom grew up. instead, it is used in soups and even there it is best when it is fresh out of a boiling pot. my husband used to eat it as a kid and introduced me to it. not sure if it's from his british dad or french mom though. i didnt really see it served in restaurants until recently so i dont think (not sure if) its common in america. (sorry for inconsistent usage of apostrophes... my kid spilled water on my keyboard. :( ).

I corned my first beef brisket this week. After 8 days of marinating in brine and pickling spices, I cooked 4 lbs of it off today in a slow cooker. 1.5 hours on High and 3 hours on Low. When cooking I added a tbs of pickling spices and put water about an inch above the brisket. The result

I love this thread for many reasons. More for the stuff people make at home than for the pictures of restaurant plates, but those are very nice as well and between the jealousy and inspiration they provoke, I'm always glad to find them here. haha, i wonder if the dolphin was in my presence then? there were a ton of people there for the dog races and then it totally petered out just a bit before we left at 5pm. perfect day to bring a kid. i love living here but sometimes the worry that bros will be out in full force at either the beach or wherever else there is booze here in town turns me off. i avoid the beach during peak times and i'm not sure if the bros come out to HB's oktoberfest or if they avoid it all together since it's so small, but i was pleasantly surprised to find that sundays are most assuredly laid back. i was just racing through town and down PCH today... with everyone back in school and work, it feels nice to have the HB i know back from the tourists and partiers. :becky:
anyway, i've lived here for 9 yrs now and this was the first time i found the time to go to oktoberfest. i hope to visit again next year and have the pretzel and beer again also. those were my favorites. probably try that german potato salad, too...

btw, i didn't know that there was any sort of rivalry between LA and OC beaches. haha. i'm originally from ventura county so i usually went to malibu, carp or santa barbara. they're kind of all the same to me... HB's just more livable since i'm not a millionaire and it's a decently large enough city to keep my options open. one of my favorite parts about it is that they've preserved some of their old buildings so the post office i go to downtown is a building from 1935 and the building i take my daughter to swim class in was built in 1931. i thought you lived in pomona? i guess dolphins feel more at home closer to the sea, lol. does the dolphin not want to reveal exactly which city near HB he lives in now? hahaha.

(god, sorry if any of that sounded disjointed. i'm pretty freaking tired but i was just in the middle of researching something important. now i'm done and can finally konk out.)

so it was my mother-in-law's birthday, she passed away two and a half weeks ago... on grandparents day with the family and my daughter around her... but she would've been 70. i remember she once mailed me home made madeleines even though she lived just an hour away in carlsbad. they were delicious and i'd never had anyone mail me home baked goods before. so i made some myself today as a sort of remembrance.

so i found out the hard way that TJ, ralph's and albertson's don't carry custard. had to make it myself for a trifle i wanted to make.
it's messy looking, but tastes delicious and is a great way to use up leftover cake... i had used a cake mix to make 12 cupcakes for my daughter and there was leftover batter so it went in a pan for a trifle for me and the husband.

sounds like it, but totally not. i hate pf changs also. luckily i'm never forced to go. i just went once for a work function and left feeling "meh" and knowing my parents would hate it. i don't think they'd hate slanted door, but they'd totally hate the prices. kind of like how my husband prefers cheap mom and pop place shaking beef to the their $32 grass fed shaking beef. i think the fancy versions are worth a try, but ultimately, i prefer the hole in the wall/homecooked versions. what makes me keep coming back are the things you can't get at home or hole in the wall places like the live scallop that have familiar flavors (lime cilantro). there was also a cotton candy dessert that had lemon grass flavor which i was intrigued by but i didn't think my daughter would like it so i didn't order it... i used to hate lemongrass when i was a kid. last year when we went, they had a thai basil flavored gelato that she liked. that pork belly that you wrap up in lettuce and dip in the tamarind sauce was also REALLY good. i'd go like more of that...

nope, that was my first visit so I kept things simple to see their quality. My 1 lb burger was cooked a bit too close to medium than the medium rare I ordered, but my friends got smaller patties and they had nice medium rare ones. I'll see if they can get it right for the lb again, if not then I may have to pass on them.

haha 1 lb is serious business. i usually only get 1/3 lb and it's always done right for me (medium rare).

i had dinner at osteria mozza about 4 years ago. pretty much 4 years to the date of my last pizzeria mozza visit (anniversary dinner both times, haha!). it was good, but the pasta's a little too al dente for my taste. i like it al dente but molto does his pasta about a minute or two less than standard so the pasta is borderline crunchy. dessert is the best thing at his places though.

it's not crunchy like it is out of the box, haha. maybe chewy is a better word. I'd say it's like if for instance you should boil spaghetti for 9-10 min to get it perfectly al dente but molto takes his out at 7-7.5 minutes...
I've heard him expressly say that he likes it cooked less so all his restaurants follow that dictum.

I like that crispy noodle chow mein dish also... but it's meant to be crispy! :)

I guess a lot depends on the sauce and the plate temp...the pasta should cook a little bit more while sitting. Maybe this way he can pump out a lot and have it sit on the counter until served lol.

that's a possibility but i feel like it's not that kind of restaurant. lol. pretty fancy and people kind of just take their time eating there. so i don't know about pumping lots of plates out, hahaha. i got linguine with clams, pancetta and fresno chiles so not much of a sauce. honestly, it was good anyway and i'd go again. i just haven't had the chance to go up to that part of LA in a while. it was great though. i was 8 months preggy, they sat me at the bar so i wouldn't have to stand up while waiting for my table and they gave me some water. then i ordered wine with my dinner without any probs. apparently, some places'll subject you to their own personal moral judgements. (for the record, i only had a glass of wine once every 2 weeks, kid turned out fine).

haha. i didn't think you would but i've seen people post about it here on lgk before. then there was a time i distinctly remember where i was at a wedding and some older gentleman was chatting with us and as he went off to get a glass of champagne for the toast, he said "none for you!" and laughed. i went and had one anyway, but it's so funny how people think they can make the decision for you.
i actually talked to a doctor friend of mine and he said that most of those studies are based on women who drink a 1/5 of alcohol a day. like you say, alcoholics.

my husband's mom drank and smoked while pregnant with my sister-in-law. that was normal in 1968 paris. judging by madmen... probably normal here in the 60s also. then she quit smoking because of my father-in-law's asthma so she only drank while pregnant with my husband. both kids are fine. brainiacs, too. my personal inclination would not be to smoke while pregnant, but like mentioned... as long as you're not regularly downing large amounts of alcohol and there aren't any issues with the pregnancy itself, i don't see a prob with wine once in a while.

now i want crispy noodle chow mein, too. damnit!

I didn't get a pic, but did anyone try the new Ludo stand at Staples? The wait to get the actual food was super slow because of the cooking time and general mistakes a new place makes that doesn't anticipate a crowd. I ordered the chicken strips with special Ludo sauce for $11.50. All sides are extra. The sauce was nothing special. You got two chicken strips and I thought they were salty. I think I'll stick with the sushi.

I love me some fried chicken but whoa, two chicken strips for $11.50+?! Goes to show I haven't been to a game for awhile to feel the sticker shock of over-priced vendors. Say what you will but I still haven't found anything more consistently satisfying then some frozen Tyson's chicken strips. haha. I did eat the frozen Claim Jumper's strips for awhile but they got old pretty fast.

it's actually pretty good. the nuts and the pizza. probably wouldn't have been so good with tomato sauce but this didn't have any. i think it went well with the savory flavors of the parm, sausage and garlic.

the only other kind they had was a supreme pizza poutine. i'm sure you could order either without the meat. it was good but it's just not the same. no cheese curds and no gravy. at least when variations are done in montreal, it's got a base of gravy + fries + cheese curds and then extra stuff. i remember i had mushrooms and peppers added to one that i got up there and it was quite good. what made the faux poutine at slater's good though was that the fries were good, the provolone was a little chewy (like cheese curds might be), the peppers were crisp and the thinly sliced beef was really good and tender. it supposedly had au jus as the sauce (in place of gravy) but i didn't notice any and it's either meant that way or probably for the better because soggy fries are no fun. a good poutine is covered in gravy but the fries don't get terribly soggy.

I've had that squash blossom & burrata pizza before and it was great! I believe it was in the spring time when the blossoms are in season. Those desserts sound fantastic too! I love their Butterscotch Budino which is always a classic.

What a coincidence! On a visit last year, after trying unsuccessfully to get in at both Mozza and the Osteria without reservations, we wandered in to Chi Spacca which was barely half-full on a Saturday night. A pretty lucky bounce it turns out. We too had the squash blossoms and flatbread which were both great, and the Moorish Lamb was absolutely fantastic. In fact the shoulder cut became our new favorite after that meal. Those pics bring back some pretty tasty memories. Thanks for sharing! Note to self: meat pie and pork loin next time around. drooooooooool......

so i made turkey pho out of the turkey carcass from thanksgiving. great melding of cultures there. i've been making turkey dinner for the last... at least 7 years for my family, but this was new. inspired from another viet-american friend of mine.

i also really like this donut shop in the hipster haven of highland park called donut friend. all their donuts are named with punk puns.

i took a pic with the owner, mark trombino, the first time i was there, too. i had just seen him play with drive like jehu 2 days before and he's produced so many excellent albums. it was just too awesome not to make sure i had photographic evidence that i was amidst his presence.

so i had a delicious dinner at haven gastropub in orange, but i was too busy drinking and celebrating to take pics.
i only had the foresight halfway through eating it to snap a pic of their housemade doughnuts, which came with strawberry ale jelly and maple cinnamon whipped cream along with my four roses bourbon:

Lunchie, looks like a nice gastronomical trip to europe! I'm feeling better but haven't gotten crazy on the meals yet, those pics were from before I got sick...potato camera=bad picture.
My guilty pleasure sandwich is adding an egg to yours and getting a croque madame. :)

For the scallops, try a asian market that keeps them whole and alive?

i didn't realize how ubiquitous bocuse is in lyon. we drove by his grand restaurant that's been on bourdain's show and then i asked my cousin about it. then she told me about his brasserie le sud which was right by my hotel so we decided to eat there (more casual and then i could just walk back to my room). his institut de paul bocuse (cooking school) was right by the hotel and le sud as well. then there are 3 other differently themed brasseries within the limits of town - le nord, l'est, l'ouest. oh and he has some fancy supermarket that sells gourmet and high end cooking ingredients and products in town as well. i'm already dreaming of going back to try the other brasseries out.

oh well, i hope you are back to eating rich delicious foods again soon. speaking of rich, i like croque madame as well, but i already feel like i need to go work out after the eggless version, hahaha.

ahhh gotcha. lol.

flew into paris, took my daughter to the eiffel tower, ate at bouillon chartier, which i mostly love for the old time ambiance (it was built in 1896). food is unspectacular but pretty good for the price. we ordered foie gras, saucisson, escargots, poulet roti (roast chicken), steak tartare, haricots verts and a half bottle of wine for about 50 euro.

took the train the next morning to antwerp, belgium and spent 3 nights there. i ate at the above-mentioned seafood restaurants up there. the best thing about vacay was that everything had roe with it. those little grey shrimps in the shell had roe and so did a lobster i got in a stew another night. i should've taken a pic of that but i was too hungry to pause. fancy place, too, they put a cloth bib on me, hahaha. i should've taken a pic of that also but i didn't want to look like a tourist. it was full of mostly locals. as were the pubs we went to.

took the train to lyon, france next and spent the weekend visiting my cousin there.

then onto nice, france where i mostly just laid out on the beach euro style for 4 days.

lastly took the train back to paris and did all my favorite things (hang out at the jardin des tuileries, visit the musee d'orsay, took my daughter on a bateau mouche down the seine - not my favorite, but kids like boat rides..., ate a bunch of camembert, mille feuille and croissants).
