That looks good, I've never made bread before. Nice job with the yeast. How did this one turn out?

Saimin bowl in Honolulu. Having never had saimin before, I asked the lady what it was. Fortunately, there was a couple sitting within a few feet of me that realized that my conversation with the hostess would not go anywhere because of my... inability to speak Japanese and her inability to speak English. He recommended the hamburger to accompany the saimin.

Saimin is a flour noodle (made on the premises) served in a shrimp broth with cabbage, ham, bbq pork and K-rab pieces. With the addition of some red pepper flakes, a dash of soy sauce and a little hot mustard, it was AMAZING. In addition, the hamburger was one of the best I've ever had. Nothing fancy; bun (buttered) meat, catsup and mayo. The meat was fantastic. If I had to guess I'd say it was about 25% pork and 75% beef.

Best meal since being on the island.

Left Hi and back in San Diego. I have family in HI and that's where I'm from so I visit every year.

Saimin in Hawaii= Ramen with a mix of the other asian noodle soup styles. Good stuff.

Haven't tried Crest Cafe yet, the parking right there is a PITA. I usually go to Hash House-a-go-go or Brians American Eatery for breakfasts.

My father's uncle was a chef and an alcoholic. rolleyes:

But anyways, he always would say, it's not just about how a dish tastes, but how it looks. It needs to look like a work of art in order to be a dish and not just a meal.

Something like this illustrates that.

It's an odd looking dish, but you can just begin to taste it by looking at it.

Go to Mitch's for the best sushi on Oahu IMO. It's a very small location and not cheap so make a reservation.

I'll get to Crest one day. :)

how was that boeuf bourguignon? the sauce looks thin and not as substantial as i'm accustomed to. it's supposed to be a stew. it looks more like a soup...

as long as they got the beef tender (melt in your mouth) and flavorful... everything else looks good though. boeuf bourguignon is one of my favorite comfort foods that i learned how to cook from a french lady, so i'm real touchy about that. lol.

tasted just fine. Yeah I eat at home probably half the week but only make a few meals myself. The rest of the time it's takeout which I tend to forget to take pictures of.

haha. awesome, it's looking right at you. i wonder how many people actually order that since a lot of people get kooked out when their meal looks at them. i'm only used to whole creatures being served at non-american establishments. we had a roast baby pig at my daughter's one year birthday party and my neighbor's weren't used to it. my neighbor's gf was kind of horrified by the pig head. lolz.

the finger for sure, since that finger wasn't originally part of the animal that went into the menudo. i get sick just thinking about human parts in food and food processing machines. i read about how workers' limbs were getting caught, mangled and dismembered at bimbo bakeries (that makes baked goods such as entenmann's pastries) and i was totally nauseated because i used to eat that stuff when i was a kid. ayeeeee... we didn't eat the pig head anyway. i think my dad took it because some of his co-workers from the old country like the jowl meat with beer.

I need to go to Hawaii again of these days. The food there is so good because it's a mix of American and a bunch of different Asian cuisines coming together.

Plus, as an added bonus, lol, the women there are all sorts of hot. ;)

Yep, I like me some Haupia. The place I posted, Helena's gives you some for free. They throw it on the same plate as the maui onion a lot of people like to use for poi, haha.

Even the Hawaiians don't lie about the stuff being a staple that keeps them alive. They love it for a reason other than the taste.

Ok one day I will be a host, until then if you get smashed and end up drunk in the bellagio take a flyer on their lasagna. The pic doesn't add much to the taste, I will say that the service tried really hard even though they knew they weren't milking a meal out of us.

hell no. geez, just the thought of marrying, procreating with and spending time with a ducks fan is making me sick. he was actually a north stars fan and played wing on a mites team when he was a kid back in MPLS, MN. he stopped following hockey when they became the dallas stars. he converted to the kings when he met me 11 years ago. i love blue cheese, but i can't blame him. it's a strong flavor that isn't for everyone. ducks fan? ugh, that's harsh!

was that polenta fried or something? i had polenta fries at a pizzeria in sacramento and they were REALLY good. i gotta say, if i'm going to eat polenta, i think i prefer it nice and crispy like that.

that cottage pie looks good. just looked at their menu, too bad they don't make chicken pie. that's my favorite.

i don't take pics of my food that often when i'm eating out, but this was pretty good -
the slanted door, san francisco.
coconut tapioca, caramelized pineapple and spicy cashews. spiced sugar beignets with mascarpone sabayon. and you might recognize... ca phe sua da.

The polenta was either deep or pan fried, I imagine pan. I'm not a big fan of polenta in general but it was pretty good with the jus from the lamb.

I am pretty sure that I mentioned it here before, but I visited Hawaii a few years ago, and aside from getting sunburned, lol, and visiting Pearl Harbor and Diamond Head, I spent most of my time stuffing myself silly. So much good food on those islands and those pictures that you are posting are reminding me of it! :D

OMG! I used to have breakfast at this hotel (not the hotel that I was staying in) that had an all you can eat breakfast deal. They had the best Pineapple that I have ever had. :D

I am pretty sure that I mentioned it here before, but I visited Hawaii a few years ago, and aside from getting sunburned, lol, and visiting Pearl Harbor and Diamond Head, I spent most of my time stuffing myself silly. So much good food on those islands and those pictures that you are posting are reminding me of it! :D

OMG! I used to have breakfast at this hotel (not the hotel that I was staying in) that had an all you can eat breakfast deal. They had the best Pineapple that I have ever had. :D

From Hawaii but i'm in San Diego now. I visit family there every year though. Seriously though, after family and friends I go for the food...forget the beach lol.

can your family adopt me? i love hawaii. i love the food, but i also love the beach. i could lay out on the sand all day. my favorite was lanai in the middle of october. no one's there and we had the whole beach to ourselves. they just renovated their fancy pants hotel though so maybe it's busier now... but seriously, i'd go there every year, too, if i could.

i saw morimoto on top chef and it made me think of you! he was there to have one of the cheftestants make him a last supper that reminded him of the food his mom would cook him after a long day of playing baseball as a child. so whimsical, ha! unfortunately, the cheftestant failed. it did not look like any simple japanese family supper i have ever seen.

Yeah that was a Dashi foam dressing. I don't know where I stand on the whole foam movement in haute cuisine nowadays. I'll need to sample more of it.

The dessert was a mix of sorbet, ice cream and purple sweet potato.

how was that lobster mac n cheese? my parents-in-law had something like that somewhere else in SD (north county) and they said it wasn't that great. they said the lobster kind of got lost in the b?chamel and cheese of the dish. yours looks to have more significant pieces of lobster though and they're retired so their idea of dining out at a "nice place" isn't the same as ours...

Very good, Terra (now closed, chef/owner moved to La Mesa and opened a lower end place called Terra American Bistro about a month and a half after this meal/pictures were taken).

The Lobster mac-n-cheese at the old place used to use Fontina, Gruyere and Brie.
The new place looks to use Asiago, Brie and Havarti.

that canoli bday cake looks like something! was that lobster unlimited? i've been to asian run buffets with my family in the past where they frown upon taking so much, the next time my family would come, there was a ticket policy where you were only limited to one or two. lol.

i don't do buffets anymore because i don't have the metabolism i did back in my early 20s, but that's right by where my in-laws live (aviara pkwy).

haha, well you know... some asians are crazy... on the one hand you got a party that is trying to save a buck by gorging on all the lobster and crab claws they can get their hands on and on the other hand the other party is trying to save money on their lobster purchases. it's just a tool to draw people in "oh! we've got lobster!"

it actually kind of disgusted me, some of my relatives who'd pile the s*** high on their plates and then keep going back for more like little piggies. my parents don't do it so much anymore now that they're getting old, but i have no idea about my auntie's family. i've seen other viet famililes do it in vegas, too. hahaha.

i've never been to a 5 star buffet though, so i was just wondering. of course, you wouldn't see my family there since it's not somewhere you go to save a buck. :)
i'd talk my in-laws into taking me to park hyatt, but they're old, too and have a restrictive diet. :(

I don't go to them in Vegas or the semi popular asian one "Todai" because the miasma of food smells mixing together is kind of sickening on such large scales.

plus the guac, beans and sour cream. a combo that can not be beat!

i only get it with guac. i like sour cream and beans also, but i don't have to have them and it's better if i don't. for my girlish figure.

the alberto's in HB sucks. yours looks better. the carne asada at the one down here is minced into teeny tiny bits and the guac is fluorescent green. hahaha. i usually get them at albatros in lake forest or sombreros in rancho bernardo. or i make it myself, but it's a lot of work.
i've been told chronic tacos has them too and although i'm wary of the place because it's more bro-tastic than authentic, i might give it a try some time...

that might be. maybe they don't want the bother of raw eggs, though. not sure either way. i never see it at restaurants (italian or otherwise) either. i'd never had it until my husband requested i make it. his dad used to make it all the time. now it's one of those dishes we make together since i need his help stirring the pasta while i beat the eggs into it. fun fun fun.

Carbonara is a Central Italian dish (Lazio), so I guess to have that as a regular on the menu I have to find a place where the family/owner comes from that region.
Otherwise I'd have to go to some generic Italian place that takes dishes from all over.

The key to fried chicken I found is an electric skillet. My dad was the king of fried chicken in the summer. He had a home business and would use the cool mornings to cook fried chicken in the skillet. He would then follow it up with fresh potato salad and cole slaw. Ahh, good times.

Once every few months I break out the fryer and fry whatever I have in the house. By the end of the night, I wish I didnt eat all that fried food, but its delicious and the kids love it. I like doing wings, onion rings, and mini corn dogs seem to come out the best. Actually the mini corndogs are incredible. Homemade are the best, but even the frozen ones come out pretty awesome.

This last session I made onion rings (same batter as the chicken), french fries (boiled for 10 minutes first, then fried them), potato chips (first time making them), and chicken wings. We had homemade macaroni salad and a green salad to go with it. Iced tea and cold beers. Hell of a summer meal!

Making fried chicken again on Monday. Used this recipe the last time we made it and it turned out awesome. Definitely the best homemade fried chicken I've ever had. Like roemick said cooked in an electic skillet. Our fryer is too small. I'm already fat so I love my deep fryer.

Tonights BBQ fun....

Got a good deal on a big salmon filet...wasnt Copper River sadly but tasty nonetheless. When I made the mustard sauce I used Dijon instead of the mustard seed style the recipe called for. Was afraid it would be too strong but on the BBQ/Cedar Plank the sauce blended and mellowed perfectly...was a big hit.

The wife had some left over shrimp from a previous meal I went ahead and used with a Lemon Pepper Cajun Dry Rub and Lime Wash. The cedar plank really is very forgiving when it comes to cooking shrimp...unlike the open flame with can rubberize the shrimp the plank allows for a very soft yet firm shrimp.

why? those roast piggies are SOOOOO good. honestly, i tried/contemplating turning vegetarian when i was in my early-mid 20s and i just couldn't. too much tasty meat. the substitutes just don't do it justice.

how were those chicken livers? do they still taste like liver? or do them being fried change it at all? i can't get into the rich, irony taste and texture, but i can do foie gras/pate. i've got to have all the fat to soften the blow.

Mom is a practicing jew and keeps kosher...I gave up both. We won't get into the religious side of why I quit but on the culinary side I like food too much to keep kosher. :)
I like the roast pig/pork products so I get to grub as much as I want. heh, more pig for me!!!

I can handle chicken livers but I can't stand beef liver. There's still a bit of that mineral/iron taste so it may still be too strong for your preferences.

I'm pretty much down with any Fowl/Avian liver product. Love Pate, chopped liver and deep fried.
Mammal liver is usually a bit too strong for my tastes. Fish liver is a toss-up...gotta be in the mood.

Don't hate!! lol, I rather get ramen packs than the cup o noodles although I've tried a couple Shin Cups and some of the other imported japanese brands/styles that are pretty good.
I liked CoN a lot more when they had the dehydrated egg but I haven't seen that for a long time.

I made a homemade version of this last night and it tasted really good! Super easy and easy on the calories too. Chicken broth, chives, shrimp and rice noodles. 5 minutes cup a soup! :punk:

I got a good Pho recipe from some Viet family friends but I have yet to try it out. Looks like a lot of work and I usually don't cook too large a portion as I'm not a big leftovers fan.

Pho Recipe

INGREDIENTS






Ox bones (Knuckle and leg bones)
2 lbs


Oxtails
2 lbs


Onion, i.e. Maui onion
2


Lime
3


Chili pepper
Optional


Green onion
One bunch


Salt, black pepper



Bean sprouts
1-2 lbs


Ginger
1 piece


Star anise
5 - photo


Cardamon
4 (dried ones) - photo


Cinnamon
3 pieces


Hot chili sauce/hoisin sauce –
See photo


Pho noodles/rice sticks (BANH PHO in Vietnamese)
2 lbs. You can buy them dried or fresh. I love the slippery softness of fresh noodles (look in the refrigerator or freezer section)
Look for ones that are medium thickness and flat like these. – see photo


Fresh mint, basils





COOKING PROCESS
1) Preparation
- Clean ox bones and oxtails, fill a pot with water and the bones
- Clean beef (chuck, brisket, rump, cut into large slices), slice beef thinly. You want your beef slices as thin as possible. The secret to cutting meat is to cut across the grain (see photo attached)
- Ginger (cut slices) and 1 onion (2 halved) will be roasted until their skin/cover were burned. Remove the burned layers by a knife (see photos). Roasting the onions and ginger gives you a wonderfully mellow and naturally sweet flavor.
- Wash bean sprouts, fresh mint, basil, and other herbs
- Wash green onion, chop the onion into small pieces
- Wash chili pepper, chop chili peppers. Lime (cut in wedges),

2) Directions:
(1) Char: Turn your broiler on high and move rack to the highest spot. Place ginger and onions on baking sheet. Brush just a bit of cooking oil on the cut side of each. Broil on high until ginger and onions begin to char. Turn over and continue to char. This should take a total of 5-10 minutes.

(2) Parboil the bones: Fill large pot with cool water. Boil water, and then add the bones/oxtails, keeping the heat on high. Boil vigorously for 10 minutes. Drain, rinse the bones/oxtails and rinse out the pot. Refill pot with bones/oxtails and cool water. Bring to boil over high heat and lower to simmer. Using a ladle or a fine mesh strainer, remove any scum that rises to the top.

(3) Boil broth: Add roasted ginger, onion, fish sauce (4 spoons), salt, cinnamon, star anise, and cardamon and simmer uncovered for 1 1/2 hours. If you want cooked beef meat, add some in. Remove the beef meat and set aside (you'll be eating this meat later in the bowls) Continue simmering for another 2-3 hours. Strain broth and return the broth to the pot. Taste broth and adjust seasoning - this is a crucial step. If the broth's flavor doesn't quite shine yet, add 2 teaspoons more of fish sauce, large pinch of salt and a small nugget of rock sugar (or 1 teaspoon of regular sugar). Keep doing this until the broth tastes perfect.

(4) Prepare noodles & meat: Slice your flank/london broil/sirloin as thin as possible - try freezing for 15 minutes prior to slicing to make it easier. Remember the cooked beef meat that was part of your broth? Cut or shred the meat and set aside. Arrange all other ingredients on a platter for the table. Follow the directions on your package of noodles - there are many different sizes and widths of rice noodles, so make sure you read the directions. For some fresh rice noodles, just a quick 5 second blanch in hot water is all that's needed.

(5) Ladling: Bring your broth back to a boil. Line up your soup bowls next to the stove. Fill each bowl with rice noodles, shredded cooked beef and raw meat slices. Add chopped green onions. As soon as the broth comes back to a boil, ladle into each bowl. The hot broth will cook your raw beef slices. Serve immediately.

Herbs, sliced/chopped chili peppers, bean sprouts, hot chili/Hoisin sauces can be optionally added.

I just ate at Burlap in Del Mar. It is one of Brian Mularky's places and it was damn good. I was there with my wife and my friend and his pregnant wife. My wife ordered short ribs and no appetizers, she does not like seafood nor experimenting with new tastes. My buddies wife just got some clams, because she cannot eat anything un-cooked. Me and my buddy ordered all of the crazy stuff that you see on Top Chef. We had beef cheeks, venison carpaccio, foi gras, short ribs of some sort, and crab cake with pate there could have been more but I cannot remember. The food was excellent and there is nothing that I would have changed. Last year we ate at Brian's other place Sear Sucker, and it was just as good.
The only complaint was that at both places the music is really loud, but besides that I would recommend it to anyone. Our bill for Burlap was about $300 with tax and tip and the bill for Sear Sucker was a bit more, but we also ordered a few bottles of wine there. And that is how my friends wife got pregnant.

Ok, I take my challenge back. lol, I spent too much time in the asian supermarket trying to find ingredients I dont' have. Finally I get it all together (except ox tails - I have to go to the meat market for that) and its late Sunday. Since I didn't make the Pho on Sunday, I made this. I kept forgetting to post this pic from last Sunday. Ralphs had a great sale on top sirloin roasts. This was a 45.00 roast for 14.00. I treated it like Prime Rib with my seasoning. Really good. Of course, sauteed mushrooms, potatoes, peas and homemade rolls. :yay:

i need to be better about taking pics of the food i eat.
i just ate at pizzeria mozza and had:
eggplant caponata, bone marrow al forno, pizza with brussel sprouts, pancetta, pecorino and red onions, espresso granita, espresso gelato and chocolate covered honeycomb. pretty good. (great treatment, too. i got the eggplant and some drinks on the house because they were 15 minutes late with the reservation. i didn't even have to say a word.)

tonight, i'm making poutine. home made fries, home made gravy and some cheese curds i picked up from whole foods. if it's not a fail, i'll snap a photo.

Rack of lamb sous vide (135F) with crimini mushrooms and potatoes pan roasted in duck fat.

(Edit 1/25/12) You can see it (above) where I didn't let the lamb rest long enough after searing it before slicing it and the pink juices are running off.

The above pic is of the 2nd attempt cooked at a lower temp (126F) with proper rest time before slicing (no running). The meat is cooked to the bone.

Next time I'll try something in between.

haha, i'm in OC! but i don't know where you can buy it. it's really easy. just make cr?pes. make custard or pastry cream. (the bird's custard i used is thinner and egg free though, a nice thing to keep in mind considering the cr?pes are eggy. if i make pastry cream from scratch, it's always quite rich.) layer cr?pes and a thin layer of custard in between. i think this was made with 16 cr?pes. this is just for us to eat at home, but i imagine if you bought it at a bakery, they'd trim the edges where it curls up a tiny bit in the pan so that you get perfect uniform edges.

You lost me at "it's really easy. just make cr?pes." Then again at "make custard or pastry cream."

I am now on a quest to see if a bakery or restaurant makes it around here. I'll report back.

Woke up with the rain this morning... working on short ribs braised in red wine.

Mirepoix in progress, added some bacon to it because it can't hurt. Good fond on the bottom of the pan before adding 1/2 bottle of red wine, beef stock, grated tomatoes and seared short ribs.

Drinking some of the wine now, will find out in a few hours but love the way the kitchen smells right now...
