Haha! This one is based around a 10qt Ninja Foodie and makes a boatload of soup so ratio accordingly.
Lentil Soup:
-2ea, 16 oz bags of either green or brown lentils.
-4ea, 32 oz boxes of beef stock
-1 pound smoked bacon, sliced into 1/2" chunks.
-1/2 pound ham chunks.
-1 medium onion, diced
-2 cups peeled carrots, sliced
-2 cups celery, sliced
-5 cloves of garlic, minced
-1 tbl sp of black pepper.
-1 tbl sp fresh thyme
-4 bay leaves
-1 cup chopped parsley
Boil lentils for 5-10 min prior to cooking. Drain all the water and rinse. Set aside.
-Pre cook bacon. Set aside. Use the bacon grease to saute below.
-Add garlic, carrots, onions, celery, thyme, and pepper. Sauté setting in the pot. Cook for 5 min.
-Add all the rest of the ingredients EXCEPT PARSLEY, and pressure cook on high for 15 minutes. Vent immediately.
- Stir lightly. Salt and pepper to taste.
-Add Fresh Parsley to taste
BOOM!!!
I need to boil the lentils before I cook them. The sugar in them wrecks my stomach and boiling them prior releases those sugars.
